FOR BO: BLACK BEAN HUMMUS

Here's a recipe from Cooking Light I've been wanting to make FOREVER but don't want to just make at home because I know Mahlon won't eat it...

Spicy Black Bean Hummus! Sounds great, looks terrible, tastes good :o)



1 garlic clove, peeled
2 T fresh lemon juice
1 T tahini
1 t ground cumin
1/4 t salt
1 - 15 oz can black beans, rinsed and drained
1 small jalapeno, chopped
Dash of crushed red pepper
2 t EVOO
Dash of ground red pepper
Pita bread or chips

Place garlic in a food processor; process until finely chopped. Add lemon juice, tahini, cumin, salt, beans, jalapeno, and crushed red pepper; process until smooth. Spoon bean mixture into a bowl and drizzle with EVOO. Sprinkle with ground red pepper. Serve with pita.
